of initiatives throughout our anniversary year,” says Khan, “including menu innovation, Protein Cups, Mango Chipotle, guest promotions, our Scan to Win program and our work supporting Food Banks Canada.” LOOKING BEYOND THE TRADITIONAL RESTAURANT Guac’s Canadian expansion is far from complete. The company sees opportunities to continue growing in Ontario while expanding further into Western Canada and Atlantic Canada. But its development strategy extends beyond conventional shopping-plaza restaurants. Universities, hospitals, airports, highway locations, arenas and corporate campuses are among the environments the company is pursuing. These settings offer opportunities to use relatively compact footprints while maintaining the core elements of the Guac experience. The company is also preparing for growth in the United States, with Texas, Georgia, New York and California identified as longer-term development markets. However, Khan emphasises that geographic expansion is only one measure of what comes next. That makes the lessons of the first decade relevant to the second. GUAC has changed its restaurant design, strengthened its franchise infrastructure, broadened its menu development and expanded the types of locations it can operate in. At the same time, the company has retained its emphasis on customizable Tex-Mex, real ingredients, housemade preparation and visible cooking. “Ten years gave us the confidence to know what should never change and the experience to know what absolutely needed to evolve,” she says. For a company entering its second decade with more than 55 Canadian locations, that distinction provides a clear framework for what comes next: fresh, customizable food, right before your eyes.
